This is a Chipotle & Chorizo dish! The flavours that permeate the dish due to the oils that come out of the sausage are just unreproducible with anything else. And, the texture of the chorizo slices is such a contrast to the silkiness of the rest of the dish, it's like finding little nuggets of joy as you are eating :¬P
- Add the chorizo slices to a hot heavy pan

When the oil starts to seep out of the chorizo:
- Add the sliced Chipotle Chillies
- Stir & cook for a minute or two
- Add the onions

- Stir & cover until onions soften just a little
(we want firm slices of onion in the completed dish)
- Add garlic and whole cumin
- Stir fry for a min with the heat still hot

- Lower the heat to medium
- Break down the tomatoes with a potato masher or fork
- Add tomatoes, salt, pepper, tomato puree & water

- Turn the heat to med/hot & bring back to a boil
- Add skinned & boned chicken
- Turn to warm-med heat & cook for 15 mins
- Add the sliced peppers

- Cook for about 8 mins until peppers are soft
- Add the drained black beans
- Stir gently until warmed through
While the beans are warming, chop some lettuce and grate some cheese for the Burrito.

When everything is thoroughly hot and the chicken is cooked, serve on a warm Burrito, or, even in a dish with a warm buttered baguette!

And on its own with just a 'bake-at-home' warm buttered baguette is a taste of indulgent heaven! Honestly, the smokey flavour and aroma from them Chipotle Chillies just has to be experienced to be believed. It's not often that I splash out on 'luxury ingredients' but this is one time I am not going to forget. Enjoy this one and let me know what you think :¬P
