Corned Beef Mash Pie

Now! I know this as corned beef hash! However, there are many versions of that dish, so just for clarity; this is topped with steamy creamy mashed potatoes. It is so quick and easy to make you can knock it up in a flash, pop it in the oven to brown or re-heat from fridge cold. This is another winner!

Here's what you need :¬)

  • 1 tin corned beef - 340g cut into 2cm cubes
  • 2 onions diced - same quantity as beef
  • 1 Tblsp oil
  • Salt - just a pinch!
  • 1 vegetable OXO cube
  • 1 beef OXO cube
  • 1 Tblsp tomato puree
  • 1/2 cup boiling water
  • 2 cloves garlic roughly chopped
  • 1 400g tin tomatoes mashed
  • 1 tin baked beans
  • Worcestershire sauce
  • 1 tsp black pepper ground

  • 1.2kg (peeled weight) potatoes, mashed
  • 1 Tblsp salt
  • 50g butter
  • 50ml milk

method

Super quick and easy! Pop your potatoes on to boil for the mash and prepare the rest of the dish. By the time the spuds are ready to mash, the rest of the dish will be ready and waiting!

  1. Put your potatoes on to boil in salted water
  2. Let potatoes simmer gently for 20mins
  3. Put onions in casserole dish with oil
  4. Add a pinch of salt
  5. Stir
  6. Microwave onions on full power for 2 mins
  7. Stir
  8. Microwave for another 2 mins
  9. Add garlic
  10. Stir
  11. Microwave for 1 min more

  1. Dissolve OXO cubes in 1/2 cup boiling water
  2. Add tomato puree to the cup
  3. Tip your tomatoes into a casserole dish
  4. Add your stock mix (Dissolved OXO cubes)

  1. Add a good splash of Worcestershire sauce

  1. Stir gently to combine ingredients
  2. Add cubed beef

  1. Drain your cooked potatoes into a colander
  2. Melt the butter into the milk in the potato pan

  1. Carefully tip the potatoes into the milk & butter
  2. Mash the potatoes with a masher
  3. Whisk the mash vigorously with a fork to make creamy
  4. Top the casserole with mash starting at the edges

  1. Fill the middle and smooth the mash with a fork

Pop in a pre-heated oven 180c for 45mins (1 hour from cold)
