Sausage & Penne Pasta

Make another crowd pleaser using our humble ingredient the sausage! I'm not too fond of pasta dishes that are mainly pasta coated in a little sauce. I like the sauce to be the star of the dish, with the pasta adding a beautiful silky texture that has soaked up all the flavours of the sauce, but not the entire sauce.

ingredients

Here's what you need :¬)

serves 4 - 6

  • 1 x white & red onion sliced in food mixer
  • 2 x carrots grated in food mixer
  • 2 x sticks of celery sliced in food mixer
  • 8 x sausages skinned and cut into 3 pieces
  • 2 Tblsp tomato puree
  • 1 x 440ml tin tomatoes - blended in food mixer
  • A dash of Worcestershire Sauce
  • 1 tsp mixed herbs
  • 1 x 440ml tin baked beans
  • 100g penne pasta or similar (fusilli etc.)
  • 1/2 red, yellow & green bell pepper
  • Fresh or dried Marjoram leaves
  • 1 OXO™ veg stock, 1 OXO™ chicken stock cube
  • 1 tsp black pepper corns
  • Salt

This is another twist on the sausage casserole recipe, so if you have made that one, this should be very familliar :¬)

We'll start of by preparing the pasta, however, you can do this while cooking the main ingredients, waiting for the bell peppers to soften, for example

Prepare the pasta:

  1. Bring a large pan of salted water to the boil

  1. Add the pasta & bring back to a boil

  1. Cook until pasta is just cooked
  2. Drain the pasta well, reserve a little of the cooking water

  1. Place the pasta in cold water to stop it cooking any further
  2. Cover & set aside until needed

Cook the main ingredients:

Now we'll prepare and cook the main ingredients of the dish

  1. Brown the sausage in a heavy pan

  1. Add sliced onions & cook until soft

  1. Add tomato puree, ground pepper & stock cubes. Cook for a minute or two

  1. Add blended tomatoes & stir

  1. Add a dash of Worcestershire Sauce & the mixed herbs

  1. Add the tin of baked beans & stir the pan

  1. Add the sliced bell peppers, stir then cover the pan

  1. Simmer until peppers are soft to your liking
  2. Add the cooked pasta & a little pasta water, about 2 Tblsp

  1. Stir well, cover & allow to simmer for 2 mins
  2. Sprinkle with the fresh Marjoram leaves to serve
