Spicy Masala Chicken is perfect for when you crave something like tandoori chicken, but do not have the patience to wait overnight for it to marinade — this is the answer to your problem! 45 minutes in the marinade is long enough & this can be grilled, air fried or roasted in your oven.

Super quick to make, really easy and un-complicated.

Spicy Masala Chicken has a unique flavour profile and balancing the sweet and sour can be a bit of a challenge. It took me a few goes, but I think I've cracked it this time. Let me know what you think...

ingredients

Here's what you need :¬)

serves 2 - 3

meat

  • 1/2 kg chicken thighs

marinade

  • Juice of 2 fresh lemons
  • 1 tsp garlic pulp
  • 1 tsp ginger pulp
  • 1 tsp salt
  • 1 tsp crushed red chilli's
  • 1 tsp soft brown sugar
  • 2 Tbsp clear honey
  • 2 Tbsp chopped fresh coriander
  • 1 fresh green chilli finely chopped

warning sign Sorry I have another warning — I know annoyings! But if you knew how much of this it took to get exactly right! I'm gonna start clucking. I do not want you going down that path. It's full of feathers stuff ya wanna spit out! Do not use a concentrate or lemon juice or indeed lemon cordial! (I know that sounds strange, but some times we all suffer larder madness. I've have myself got that, maybe this will do moments.) The recipe needs TWO fresh lemons juiced.

This is so easy to put together that you are going to love making it, let alone devouring it!

  1. Put all the marinade ingredients in a box or bag

  1. Give them a good mix

  1. Coat the chicken thighs all over
  2. Cover & marinate for 45 min's

warning sign A warning on the marainade time. Do not leave longer as it will cook your chicken & the lemon flavour will over power the entire dish. Creating a kinda lemon curd on the edges...melted chicken mess! If you box clever you can make your marinade the day before set it into the fridge. Add your chicken exactly 45 minutes prior to cooking "Tis just Nutty's way" of preparing, now all I got to do is put it in the oven exactly 45 minutes later.

  1. Place on a roasting rack & cook for 15 - 20 min's
ready for the oven / grill
