Ingredients for the Pudding
- 75g soft butter
- 175g dark brown demerara sugar
- 200g self-raising flour
- 1 Tbsp golden syrup
- 2 Tbsp black treacle
- 2 eggs
- 1 tsp vanilla extract
- 200g pitted dried dates
- 1 Tbsp bicarbonate of soda
Butter & flour to grease and line your baking tin.
Ingredients for the Caramel Sauce
- 100g light brown sugar
- 100g butter
- 200ml double cream

Like all cakes it is best to get your self organised!
Our first job is to line our baking tin with butter and flour. It needs to be 20cm x 20cm x 5cm deep or the equivalent round / oval etc .
pre-heat the oven to 200c.
Now it's a simple cake batter, however, this one requires self raising flour & bicarb so — once the raising agents are added the cake needs to be got rapidly into the oven.
One great thing about this dessert is it can be re-heated and
even frozen.
So with the oven on, tin buttered and floured...
- Get a small sauce pan, stick blender and a mixer.
- Place the butter and sugar in the mixer then blend until creamy.

When creamed — add the following to the mixer:
- 2 eggs
- 1 Tbsp golden syrup
- 2 Tbsp black treacle
- 1 tsp vanilla essence
- Add your flour but dont blend yet!
Now to get our dates ready...
- Place dates and 300ml water into a sauce pan.
- Heat to a simmer.
- Now blend the dates with a stick blender.
- Add the bicarb to the hot date mixture.
- Tip into the mixer (while still hot) with the other ingredients & mix till combined. Cake batter is now done!
- Immediately! Transfer to your prepared cake tin and set in the oven for 40 to 45 minutes.
In the mean time...
Make the caramel sauce
- Melt the butter, add the sugar & mix together on the hob
- Once completely combined add your cream and whisk till smooth.
Store in the fridge if not using immediately.
Re-heat the cake carefully in the microwave - about 30secs...
...then very gently, re-heat the caramel sauce, but don't let it boil, or it may split and spoil!
...and pass some to your neighbours — as you really shouldn't eat it all!
